What is Mead?

Mead is an alcoholic beverage made from fermented honey.  There are large number of varieties of mead, usually using some combination of herbs, spices or fruits.  Mead can be made dessert wine sweet, but it can also be made exquisitely dry, or any level of sweetness in between.  Furthermore, like the flavour variation in wines from various grape varieties, mead can also display a similar variation in flavour and complexity depending on the source of the nectar collected by the bees.  This makes mead a fascinating beverage, with its own unique character and taste.

    Hey, I have a question. I saw your how to guide on /ck/ and I really want to try it, but I’m curious, does it smell? Like if I made it in my house, would the whole place smell of mead and alcohol?

    • No there isn’t that strong of a smell, most of what you get initially will be the aroma from the honey, herb, spices or fruit juice that you use. As it ferments, the aroma will get weaker. There will be a slightly noticeable alcohol smell, but nothing over-powering. I’ve made five one gallon batches inside my kitchen cupboard, and you wouldn’t know they were there unless you opened the cupboard.

      If you are going to try that mead vertical that I made, here is a few extra tips that I forgot to include: 1) Omit as much of the white pithy part of the orange peel as possible (a zester or a vegetable peeler work well), this will make the mead less bitter; 2) Leave extra space in the jug if you are adding whole pieces of fruit, otherwise the jug will overflow; 3) If you want your mead to be a little sweet at the end, add some extra honey/fruit juice to taste after the fermenting is done.

      Also, try not to get too discouraged, it took me several tries before I got something that was decent. So try making a couple of batches, using different honeys, fruits, herbs, spices or yeast. Keep some notes in case you find something that works, and try to have some fun as well!

    I was wondering what ingredients modify the mead. Like i know honey for example kind of determines the sweetness. This is the first batch i made so i didnt really experiment. Also is there really any “set” time the firmintation should be finished by?
